JAMMIN' JERK VEGETABLE SKEWERS

Serves 4

Healthy, simple, quick and delicious! These vegetarian-friendly skewers will brighten up your next BBQ.

Ingredients

12 Skewers

80gm Jammin’ JeRk Mild Marinade

¼ cup Vegetable Oil

1 large Red Onion, chopped

2 Yellow Capsicum, chopped

2 Small Zucchini, chopped

2 Punnets Cherry Tomatoes

200gm Button Mushrooms

200gm Halloumi Cheese (optional)

Instructions

Soak skewers in water for 1 hour or overnight.

In a shallow bowl, whisk together Jammin' JeRk and Vegetable Oil. Set aside.

Thread the Vegetables and Halloumi onto skewers, alternating different vegetables. Brush the Vegetables with marinade, turning to coat all over with the spices.

Preheat the grill until hot then arrange the skewers and cook for about 5 minute per side, turning once, or until the vegetables are tender and nicely browned.

Serve hot!
