JERK TOFU VEGAN SANDWICH

Ingredients:


Firm tofu

Bread of your choice

Jammin' Jerk Marinade

Sandwich fillings

 

To make your tofu:

 

  1. Cut the tofu into 1cm thick slices. Place tofu onto a wire cooling rack, then stack some heavy weights on top (I used a heavy book- just be sure to put a layer of grease-proof paper between the tofu and the book), leaving for 6 or more hours. This process is done to push water out of the tofu, so that is can absorb the marinade (next step), and improve the final texture.

 

  1. Remove tofu from weights. Using your fingers, heavily rub @jamminjerk marinade into the tofu,coating all areas. Place tofu into a zip-lock bag and refrigerate overnight.

 

  1. When you're ready for your sandwich, remove tofu from the fridge. Heat an iron skillet with your oil of choice (I used coconut oil), and ad tofu when hot. Cook each side until brown and crisp.

 

  1. CREATE YOUR SANDWICH! My fillings are fresh hummus, horseradish mustard, garden greens, grilled capsicum, avocado and the tasty, jerk tofu! Enjoy.
